Peppermint Fudge

I'm on a roll tonight. Here is an easy recipe that will wow your friends, co-workers or whoever likes fudge...

Peppermint Fudge

Here are some pieces that I started arranging in a container (bought on clearance at Wal-Mart last year- $1.00!!!). I put the pieces in those mini candy cups.
Here is another batch (actually PART of a batch, since 1 batch makes atl east 40+ pieces)...I brought this to the PASACAT potluck, so it's on a tray.

Okay, okay, here are the:
INGREDIENTS:
2 cups milk chocolate chips
1 cup semi-sweet chocolate chips
1 can of sweetened condensed milk (NOT EVAPORATED)--shown here is Magnolia brand, but they also have Eagle Brand. It only comes in 1 size I believe.
1 dash of salt
1 tsp peppermint extract
20 crushed peppermint candies

Melt the chips and condensed milk over low heat. Stir until smooth. This should take about 5 minutes.
Remove from heat and stir in peppermint extract.


Pour mixture into 8 x 8 pan (already pre-lined with waxed paper).
Sprinkle the crushed peppermint candy on top.
Chill in the fridge for 2 hours or until firm.
Turn out the fudge on a cutting board and slice into squares (size is up to you)
Since this fudge is so thick and rich, tiny pieces will do! Unless you're a chocolate freak with a major sweet tooth!

OMG again! That fudge looks really decadent!!!! Yum-o! OMG...I can't stand Rachael Ray, but find her show curiously interesting and entertaining. She's so friggen' annoying, but she does have some quick, neat little ideas! So, I guess does that mean I like her show?? Anyway....cool nutz recipe and I'm going to attempt to do the fudge recipe too.

Yes, Rachel Ray is so fkn annoying! But, she seems more approachable and nice compared to Martha Stewart.

Quick aside, some gossip blog reported that her husband was caught in some wierd kinky sex scandal. Hmmmm...

Just made the fudge for the Christmas lunch at my mom's (I'm blogging on my dad's computer) and my sister really likes it. My sis in law made it for her work and it was a hit. I think it's all in the presentation as well.
